Ratio: The Simple Codes Behind the Craft of Everyday Cooking, by Michael Ruhlman
[This book changed my life! Baking was the last place I was tethered to recipes for the most part, but with a few simple ratios there is no mystery and all the room for my muse to run free. Of course there are many useful ratios I use for cooking found here as well. This is the cookbook I have always wanted every other cookbook to be, but didn't know it yet. OK, I'll stop now.]

Peter Reinhart’s Whole Grain Breads
[Anyone interested in whole grain bread should own this book. I used to make edible bread, now I make extraordinary bread]
